Using an abundance of fresh local produce our Executive Head Chef has created a range of delicious seasonal menus for you to enjoy. The dishes combine Chef’s love of producing a perfect harmony of flavours, with the influence of Beatrice Tollman, President and Founder of the Red Carnation Hotel Collection. Beatrice has a particular passion for food and entrusts her famous signature dishes to our kitchen brigade .
Our breakfast buffet offers a wide selection of meats, cheese and fruit whilst our À La Carte breakfast is cooked to order. Guernsey Eggs Benedict is a firm favourite with all our guests and is made only with local produce.
With daily specials, delicious steaks and fresh Guernsey fish on offer both at lunchtime and in the evening, The Brasserie is popular with our hotel guests but also a favourite with the local financial community and a popular meeting place for those who want to catch up with friends over a glass of wine and a light bite.
