You may have spotted Guernsey home cook Lisa Bailey on the first episode of MasterChef 2019, as she impressed judges with her culinary skill and highlighted some local ingredients in the process!
Lisa began the competition with a dish of pan-fried fillet of mackerel, a fish commonly found in local waters, and also on local menus! She accompanied it with a potato rosti; cream, chive and brown shrimp sauce; and tempura samphire; an ingredient that she often forages for around our island’s coastline!
Her starter in the second round also had a very Guernsey feel to it, as she plated up a dish of seared scallops with pickled cucumber, an apple and fennel salad and a lime mayonnaise. Our island is famed for the freshness of its shellfish, and scallops are a true local favourite. Lisa finished her dish with a sprinkling of her own creation, “Guernsey dust” – a fine salty powder made of ground seaweed taken from our own shores.
Lisa’s local flavours impressed the judges, earning her a place in the quarter-finals which are set to air on BBC One at 9pm tonight!
